The Fins Bois cover about 31,200 hectares of vines used to produce this eau-de-vie, and is therefore the largest of the six Cognac crus. They produce round, supple, rapidly aging eaux-de-vie with a bouquet reminiscent of pressed grapes. This characteristic is due to the soils essentially composed of red hard limestone, giving the eaux-de-vie a balanced aromatic profile, in addition to the relatively rapid maturation.
