Provence offers some very beautiful wines, especially in the palette and cassis region. Here the profile and potential of the wines are more related to the work of each producer than to the general typicity of these appellations. Namely, Palette is a tiny appellation close to Aix-en-Provence that produces great white wines. Then, Cassis is a coastal vineyard with a heterogeneous production. Some whites are aromatic and well-balanced, although fairly simple and drinkable within the year.
