Within the Pacherenc du Vic-Bilh appellation area, the clay and silica dominated terroirs favor white grape varieties, which are at the origin of the dry or sweet wines of the Pacherenc du Vic-Bilh wine. The climate, predominantly oceanic, is continentalized from the southwest to the northeast of the area.
The grape varieties mainly used for Pacherenc du Vic-Bilh wine are Arrufiat, Courbu, Gros and Petit Manseng, Sauvignon, and Sémillon. Two thirds of Pacherenc du Vic-Bilh wines are dry white wines, the rest of the production being sweet wines. These are not made using the noble rot technique as in the Bordeaux region, but by loss of water from the grapes on the vine: passerillage. Among the production, one will particularly note that of the Château Montus, the Cave de Crouseilles or the Château Bouscassé.
