The AOC Bourgogne sparkling wine concerns only the sparkling red wines from the Burgundian vineyard. The 600 hectares of its production area are spread over communes in four departments.
The continental climate of the vineyard is influenced by the Mediterranean to the south and by the Atlantic to the west. The terroirs therefore experience significant variations, reinforced by a changing soil composition, depending on their location in the region. Burgundians therefore distinguish between "climates", to reflect the complexity of these different terroirs. The production of these sparkling red wines is today very marginal. They are elaborated using the traditional champagne method, in the same way as the AOC Crémant de Bourgogne. They are aged for a minimum of 9 months in the bottle, allowing them to develop their powerful red fruit aromas.
To be able to claim their appellation, these sparkling wines must be produced only from the Pinot, Gamay, Caesar and Tressot grape varieties, with yields not exceeding 55 hl/ha. They have an intense robe and a fine, persistent foam. In the mouth, they are fresh, with aromas of blackcurrant, raspberry and strawberry.
