Cafayate is located in the north of Argentina, at an altitude of almost 1700 meters. This gives a rather unique landscape, the vineyards being located in the middle of high mountains. Nevertheless, the climate is desert, the soil is sandy and the average annual rainfall is less than 200 millimeters. Despite the fact that the climate is desert, the temperatures are not extremely hot, ranging between 10°C and 21°C over the year. The nights are cold. These daily temperature variations allow both to give very developed aromas thanks to the warmth of the days, as well as thicker grape skins giving full-bodied wines thanks to the freshness of the nights.
This microclimate that Cafayate possesses makes it possible to exploit the grape variety of Torrontés in the best possible way. It’s very fruity taste and very expressive aromas have not always been unanimously appreciated.
Wine and Cafayate are therefore intimately linked. But this know-how remains quite young, the city having been created in 1840. But as the microclimate of the province is unique, wine farms abound in the valley. Cafayate therefore has today all the necessary means to develop its wine-producing activity. To be continued!
