The wine of Barsac is a sweet white wine obtained by overmaturity of the grapes with development of the noble rot Botrytis cinerea. The noble rot has the effect of concentrating the sugar in the grape and brings complex and typical aromas. In the Bordeaux region, it develops wonderfully on the Semillon grape variety which is very sensitive to it. Once the grapes are well "roasted" by the Botrytis, they are picked one by one by hand, this is called selective sorting. They are then vinified in the traditional way, the wine is then matured in barrels.
When young, the Barsac wine has a golden, brilliant, limpid color. In its youth the nose is composed of very clear and intense notes of hazelnuts, honey, candied fruits such as apricot, orange. In the mouth it is a dense, complex and rich wine. Nevertheless it has a beautiful vivacity which brings freshness and which will allow it to hold in time, without becoming lumpy. Its ageing potential is high, it can be kept from ten to more than a hundred years for great vintages.
