To the west of Rodez, at the foot of the Aubrac, Marcillac is the most important Aveyron appellation, which for a long time was the only one to benefit from the AOC.
Historically linked to the Abbey of Conques, it is located in the natural region of the Vallon de Marcillac, a depression bordered by cattle and sheep breeding areas.
In this foothill of the Massif Central, winters are harsh, but summers are dry and hot. The vineyard is located on the best exposed slopes of generally very steep valleys, which have often been terraced.
The main grape variety of the appellation, the fer-servadou, called here mansois, gives a red wine both tannic and very aromatic, of a great originality.
