Veneto is the most productive region of Italy. Its most prolific sector is that of Verona, with red wines in Valpolicella and Bardolino. However, not all the wines of the Veneto region are destined for everyday consumption and are distinguished by very singular expressions, the most remarkable type of which is Amarone di Valpolicella.
The Amarone has a very specific elaboration, made from grapes partially dehydrated on racks. Produced in the Valpolicella area and made from the same grapes, it is vinified dry, therefore without residual sugars, unlike the Recioto della Valpolicella, which is also made from a dry harvest. Another regional speciality, Prosecco is a sparkling or sparkling wine whose foaming is obtained by the closed tank method.
