The Bairrada DOC region is located about halfway between the coast of the Vinho Regional territory and the inland of Portugal. Bairrada's red wines were generally composed of a minimum of 85% Baga. The traditional Bairrada still exists under the label "Bairrada Clássico" and it can be one of the most interesting Portuguese wines when it is made by a skillful wine grower and winemaker.
The ripe Baga grape can produce wines that are densely structured, complex, fruity and aromatic, with a fairly marked acidity, firm tannins and excellent ageing potential. Other winemakers have turned to alternative Portuguese red grape varieties such as Touriga Nacional, but also sometimes to international varieties such as Merlot, Cabernet Sauvignon and Syrah, again under DOC.
In general, Bairrada wines have excellent ageing potential, usually more than 10 years. As they age, these wines acquire a unique character that includes a refined bouquet of honey, smoke and spices.
