The Chablis AOC benefits the white wines of Burgundy produced in about twenty communes around the town of Chablis in the Yonne. The appellation was granted by a decree of 1938. The vineyards of Chablis thus occupy the hillsides bordering the Serein valley. It is a hilly region whose summits are very often wooded. The vineyard of Chablis includes 4 levels of appellation: Chablis Grand Cru, Chablis Premier Cru, Chablis and Petit-Chablis.

Chablis wines are made exclusively from Chardonnay, the only grape variety authorized to produce the white wines of the vineyard. The reputation of Chablis wines is very important and Chablis has for many years been synonymous with great dry white wines all over the world.
