Of ancient settlement, probably Roman, the vineyard of Estaing developed thanks to the religious community and the welcome of the pilgrims on the way to Santiago de Compostela. The grape varieties adapted to the soil: the Fer Servadou is replanted but also other more distant varieties: the Gamay, the Cabernet Franc and Sauvignon.
The production is indeed confidential, with the smallest cooperative winery in France with a dozen or so producers producing wines in all three colors. The vines are harvested by hand on the steep terraces. The red wines are marked by a pleasant freshness, dominated by fer servadou and gamay with aromas of red fruits.
