The Estaing vineyard extends over the communes of Coubisou, Estaing and Sébrazac. Composed of 54 hectares, the wine of Estaing has gradually regained its letters of nobility. Established at the base in the 10th century by the great family of the Counts of Estaing, it experienced a long decline over the centuries. However, in 2010, a great comeback was observed with a harvest that reached 750 hl for a classified area of nearly 20 hectares.
This wine-growing terroir has found its preferred terrain on schist slopes and limestone plateaus, combined with a Mediterranean-type microclimatic influence strongly disturbed by the mountain climate.
The main grape varieties authorized for these white wines are Mauzac, Chenin and Saint-Côme, locally called Rousselou.
