The AOC Saint-Bris occupies land in 7 communes of the Yonne,115 hectares of surface area devoted to viticulture. An altitude ranging from 150 to 275 meters, as well as a northern position in the Burgundy region, are very successful with the sauvignon grape variety. 510 hectoliters of wines made from this grape variety are produced annually.
Sauvignon has the particularity of giving wines of better character when it is slowly allowed to reach maturity. In order to do this, the producers privilege the implantation of the vines on the least exposed areas. 4,100 hectoliters of dry, lively and nervous whites are produced after each harvest.
They have a light golden straw color and give off aromas of citrus fruits, peach and blackcurrant, with more exotic notes of lychee. This aromatic complexity gives in the mouth tender wines, full of fruit, with a finish of spice and iodine. Saint-Bris wines can be drunk young or kept for a few years to reveal candied fruit aromas.
