Bergerac rosé is produced in the vineyards of Southwestern France and more precisely in the Bergerac wine region. Very beautiful bleeding rosés ( de saignée ) are produced there. A process that consists in leaving the skins and pips in the grape must for a few hours before fermentation, to give them color and structure. The result is a wine that can accompany a whole meal, but also very comfortable as an aperitif. Bergerac also produce very beautiful press rosés which offer a rosé with a lighter color and more floral aromas. Some producers blend the two techniques (press rosé and rosé de saignée), to produce a rosé that is finer and fruity, but less structured.
The main grape varieties that go into the composition of Bergerac rosé wine are: Merlot, Cot, Cabernet Franc, Cabernet Sauvignon.
