The wine of Cassis is one of the first to have received the appellation AOC. The AOC Cassis is produced by 12 estates whose 196 hectares of vines are exclusively located in the commune of Cassis.
The vineyard of Cassis is protected from the Mistral wind by the impressive height of the surrounding hills. In this amphitheater, Cassis is under the dominance of a microclimate favorable to the cultivation of quality vines. The vine of Cassis rests on three types of soils: shallow and eroding soils, rendziniform soils and shallow brown soils developed on colluvium. The approximately 200 hectares of the Cassis appellation allow an annual production of one million bottles of the precious nectar.
The harvesting of Cassis wines is done by hand. The grape varieties used for the white wines are Ugni blanc, Clairette, Marsanne, Doucillon and Sauvignon.
