The AOC Clairette-du-Languedoc is located on terraces overlooking the Hérault river and covers only 100 hectares. This appellation produces about 3,300 hectoliters per year, exclusively in white wines, on soils composed of quartz pebbles, flint and agglomerated limestone.
The vineyard is located in a Mediterranean-type climatic zone, where the Cévennes bring a little freshness and mountain humidity. This AOC has the peculiarity of being made with only one grape variety: clairette blanche. In order to respect the requirements of the soil and the climate, the vines are pruned in goblet or palissées, on a small number of heads, the main part of the harvest being carried out by hand.
Clairette-du-Languedoc is known for its aromas of fresh fruit, honey, white flowers and vanilla. This wine can be vinified as a dry, mellow, "rancio" or, very rarely, a liqueur wine. Although now rather marginal, it is a very old wine, known from the Roman gallos, which has been mentioned in the archives of the history of Languedoc-Roussillon. It was also intensely exported during the Middle Ages and the Renaissance, under the name Picardan.
