The small vineyard of Maury is the northernmost of the vineyards of Roussillon, mainly on the 1,000 hectares of the commune of Maury and on certain places known as neighbouring communes. The appellation thus covers four communes of the Pyrénées-Orientales to the North-West of Perpignan: Maury, Tautavel, Saint-Paul de Fenouillet and Rasiguères.
We can distinguish the Maury "Vendange", "Récolte" and "Vintage" aged for a minimum of 12 months which are powerful, complex wines with notes of black fruits. The red Maury wines, oxidized, are on notes of dried fruits, cocoa and coffee. The white Maury wines, aged for at least twelve months, are wines with notes of white flesh fruits and citrus fruits that evolve over time with aromas of jammy fruits and honey. Maury Hors d'Âge wines are aged for a minimum of five years in an oxidative environment. Finally, the Maury Rancio wines are acquired by the maturation of the "Rancio" taste.
