At the foot of the Alpilles Massif, dominated by almost immaculate white rocky bars, shines a green setting. It is in this enchanting landscape that the terroir of Les Baux-de-Provence was born.
The resolutely Mediterranean climate is largely dominated by the Mistral, a wind coming from the North-West and blowing about 100 days a year. It is this wind that will determine the dry and hot periods of summer while keeping cryptogamic diseases at bay. Thus, by this breath of wind, the Baux-de-Provence can boast of being one of the most "organic" vineyards in France: 11 out of 12 winegrowers are in organic farming while the last one is in struggle.
The finesse of the red wines comes in particular from the 3 grape varieties perfectly adapted to the climatic and geological conditions. The Grenache, which brings the softness of the fruit, finesse and roundness in the mouth, the Cinsaut, very aromatic, supple and fruity, is an aid to aging, while the very Spanish Carignan will bring the tannic load to structure the wines. Of course, other grape varieties such as Cabernet-Sauvignon, Syrah, Mourvèdre or Counoise will be able to enter into the blends, but their total surface area represents only 10% of the planted area.
