Domaine Mallard: The Great Discovery
The Maillard family has been making wine in Burgundy since 1766. In 1952, Daniel Maillard, Pascal's father, decided to dedicate himself exclusively to this profession and concentrated his efforts on the cultivation of the estate and the production of wines that respect the terroir and soils. . Thus, the property has gone from two hectares to 19, distributed among the municipalities of Aloxe-Corton, Pommard, Beaune, Ladoix-Serrigny, Chorey-les-Beaune, Meursault, Volnay, Savigny-lès-Beaune...
Both in the vineyards and in the winery, the methods are traditional, although Pascal Maillard does not hesitate to do everything possible to avoid different treatments. All cuvées, classified from regional appellation to grand cru, are meticulously crafted, from grape selection and vinification to aging in 228-liter oak barrels...

Maillard Corton Blanc Grand Cru 2021
On the label, the Grand Cru designation must appear immediately below the name of each of these designations in the same font size. The vineyards of the Corton appellation are located between 250 and 330 meters above sea level. The vast surface area of the Grand Cru and the large number of Climats explain the nuances in the characteristics of these wines.
Grape variety: Chardonnay
Area: 0.34 hectares
Climate: Facing southeast/southwest, this slope offers a perfect geological section.
Vinification: The grapes are picked by hand and the best clusters are carefully selected in the vineyard. Unlike red wine, alcoholic fermentation takes place in barrels.
Aging: 12 to 18 months in new barrels.
Tasting note: With a beautiful light golden color, this wine has a rich, honeyed and toasted nose. Broad and subtle, combining the finesse and power of a grand cru and a grand vin, this Corton is located in the "Les Renardes" area. It is best enjoyed young, but can be kept for 5 to 10 years. Pairs wonderfully with foie gras and turbo.
Maillard Pommard « La Chaniere » 2021
Pommard wines have a reputation for being powerful and tannic. Its vineyards are located between those of Beaune and Volnay, in the heart of the Côte de Beaune. The vines grow here on steep slopes at altitudes between 240 and 380 meters, on clay-calcareous soils. It is always a little closed at first, so it is important to let it mature for at least 5 years before uncorking the bottles.
Area: 0.77 hectares
Grape variety: 100% Pinot Noir
Age of the vines: 25 years
Vinification: After a manual harvest, the best clusters are selected. Immature or damaged clusters (botrytis) are systematically separated and destroyed. Only the best clusters are vatted for winemaking.
Tasting note: Intense crimson color, with notes of game and very ripe fruit. Vivacity and tannic structure define the palate. Very well located, very close to the 1st crus. It combines very well with hunting (wild boar, for example).
Maillard Chorey Les Beaune Rouge 2021
Chorey-lès-Beaune is produced in the Burgundian vineyards of eastern France, more specifically in the Côte de Beaune wine-growing region.
Area: 5.80 hectares
Grape variety: 100% Pinot Noir
Age of the vines: 30 years
Tasting note: This wine has a bright ruby color and a powerful bouquet of leather and red berries. It has body and is balanced by its finesse. Combines very well with beef and rabbit. It should be drunk after 2 or 3 years in the bottle and can be kept for 8 to 12 years.
Vinification: After a manual harvest, the best clusters are selected. Immature or damaged clusters (botrytis) are systematically separated and destroyed. Once vinification is finished, the wine rests in vats for a few days.
Aging: 25% in new barrels for 18 months. Bottled after light filtration to give the wine all its character, fragrance, substance and length in the mouth.
Maillard Volnay Les Combes 2021
Volnay is one of the main vineyard appellations of the Côte de Beaune. They may not have any Grand Crus, but some of their Premier Crus are on par with the best Burgundy wines. The Volnay vineyards are located between Meursault (to the south) and Pommard (to the north). Sometimes the vines are planted at more than 270 meters above sea level on Mount Chaignot.
Grape variety: 100% Pinot Noir
Vinification: The wine ages for 12 to 15 months in oak barrels. The wines are then bottled unfiltered to preserve the full body and fruit potential of the base wine, preparing it for aging to maturity.
Tasting note: Once aerated, this wine releases powerful aromas of menthol and spices, the first part of an aromatic spectacle in which blackberry, cranberry and black pepper stand out. Vinification gives this wine a fine structure and Flexible tannins, which allow the palate to express all the character of its fruit.
Maillard Bourgogne Chardonnay 2022
Area: 0.28 hectares
Grape variety: Chardonnay
Vinification: The grapes are picked by hand and the best clusters are carefully selected in the vineyard. Unlike red wine, alcoholic fermentation takes place in barrels. The wine is filtered before bottling.
Tasting note: good acidity, beautiful white flower fruit, drink young, as an aperitif (kir), with starters and Burgundy snails.
Maillard Bourgogne Pinot Noir 2022
Area: 1 hectare
Grape variety: Pinot noir 100%.
Vinification: 12 months. Bottled after light filtration to give the wine all its character, fragrance, substance and length in the mouth.
Tasting note: purple hue, nose of red fruits, flexible and pleasant wine. Pinot Noir from Burgundy is a wine that is drunk young, after one or two years in the bottle. It can be kept for 4 to 6 years. Combines very well with sausages and white meats.
Mailllard Corton Rouge Grand Cru 2021

Vinification: After a manual harvest, the best clusters are selected. Immature or damaged clusters (botrytis) are systematically separated and destroyed. In this way, only the best clusters are placed in the vats for winemaking. Once vinification is finished, the wine rests for a few days in vats. 75% in new barrels for 18 months. Bottled after light filtration to give the wine all its character, fragrance, substance and length on the palate.
Tasting note: This large purple Corton with violet tints initially reveals toasted notes and hints of pinot, before opening to notes of undergrowth and animals. It is best drunk from the age of 7 and can be stored for up to 20 years. Perfect with wild boar.
