Domaine Pavelot, located in Savigny-lès-Beaune in Burgundy, is a family-run wine estate handed down from generation to generation. Now run by Hugues Pavelot, with the support of his brother Pierre-Yves, the estate covers around 13 hectares, mainly in the commune of Savigny-lès-Beaune, but also in Beaune and Aloxe-Corton.
The vineyard benefits from great geological and topographical diversity, covering two hills linked by a valley, with altitudes varying between 220 and 360 meters. This variety of soils and exposures enables the estate to produce a wide range of wines that faithfully reflect the specific characteristics of each terroir.
The grape varieties grown are Pinot Noir for the reds and Chardonnay for the whites, in keeping with Burgundy tradition. The estate offers a dozen wines of varying typicity, from regional appellations to Premiers Crus, each expressing the unique character of its climate of origin.
Viticulture is practiced according to sustainable principles, with manual harvesting and rigorous selection of grapes. Vinification is carried out in the traditional way, with ageing in oak barrels for 10 to 12 months, with the proportion of new barrels varying between 10 and 30%, depending on the cuvée. This approach aims to produce elegant, balanced wines that are representative of their terroir.
The estate's flagship cuvées include Savigny-lès-Beaune Premier Cru ‘La Dominode’, renowned for its robust structure, and Savigny-lès-Beaune Premier Cru ‘Aux Guettes’, appreciated for its finesse. The estate's generic Burgundy is also praised for its excellent value for money.
