Nothing predestined Dominique Hauvette to become a winegrower. Born in Paris, she shared part of her life between the capital and Val-d'Isère, where she worked on her fitness as a ski instructor.
In 1984, the only daughter of five siblings came for a month's vacation to Saint-Rémy-de-Provence. She won't leave again. The energetic 30-year-old decides to indulge her passion for horses, purebred Arabians that she breeds for endurance races, and earns her living on construction sites as a house painter. But Dominique feels a deep desire to work the land...
In 1988, one of his neighbors who retired gave him his farmhouse and two hectares of vines at the foot of the Alpilles massif. She has no idea of the profession of winegrower; his neighbor Éloi Dürrbach (domain of Trévallon) accompanies him with benevolence. She begins a rigorous work and a deep reflection to try to capture the energy of the living and to transmit it from her vines to the bottle. "Wine is life. You have to get as close as possible to the life of the plant, yeasts and bacteria, without oenological inputs except a little sulfur to succeed in producing a living wine", confides -She.
When they are perfectly mooned, the wines of Dominique provide a feeling of soothing and energizing well-being. This quest for the infinitely pure flows with evidence in its cuvées with the names of fine stones (Amethyst, Carnelian) or in its radiant white Dolia.
