The domain was initially established with only 10 ares of vineyards, cultivated using horses by the Gauby family, in a wild, arid, and rugged environment. At that time, agriculture was a source of livelihood for those who practiced it, and the Gauby estate practiced diversified farming.

Georges Gauby, a passionate rugby player (he was even an international), expanded the estate by purchasing an additional three hectares of vineyards, located 20 km northwest of Perpignan. He made the decision to stop selling his grapes and to start vinifying his own cuvées.

In the mid-1980s, Georges Gauby's son, Gérard, took over the family estate. With his wife Ghislaine, they infused new dynamics into the property, increasing its area from 3 to 100 hectares of diversified farmland. Among these, 40 hectares are dedicated to vineyards.

As early as 1996, the couple decided to begin transitioning to organic agriculture. They gradually eliminated chemical and synthetic products in favor of homemade preparations based on plants and essential oils, thus demonstrating their commitment to environmentally friendly and biodiversity-friendly practices.

Starting from the 2008 vintage, Lionel, Gérard's son, took over the vinification of the Gauby estate's wines, thus perpetuating the family tradition and bringing his own expertise to the process.

Since 2014, new plantations within the Gauby estate have been carried out using agroforestry. This approach aims to climate the vineyards by reducing ground temperatures by a few degrees.

Since his beginnings in the 1980s, Gérard Gauby has established himself as an inspiring, passionate, and demanding winemaker. He cultivates his vines with deep love and absolute respect for the plant and the ecosystem. His work has revealed to the world the complexity and exceptional potential of the Calce terroir, characterized by its limestone and ferruginous shale soils.

Over the years, Gérard Gauby has evolved his winemaking style towards less opulent wines, favoring purity and lightness. Accompanied by his son, he continues this relentless quest for perfection, constantly improving the expression and deliciousness of his cuvées.

The white wines are distinguished by their great precision, remarkable longevity, and perfectly controlled aging. As for the reds, they are characterized by their purity and depth, revealing all the richness and finesse of the terroir.

The 2021 vintages thus rise to summits of quality in both colors, confirming the exceptional talent and expertise of Gérard Gauby and his son.

The estate produces approximately 80,000 bottles of wine per year from its 44 hectares of vineyards, with 25 hectares dedicated to red grape varieties and 19 hectares to white grape varieties. Each year, the harvest is carried out manually, showcasing the expertise and attention to detail in the winemaking process. With an impressive average age of 70 years, the estate's vines testify to their longevity and the richness of their terroir, yielding grapes of exceptional quality. The estate favors an authentic approach to viticulture, not purchasing external grapes but relying solely on its own vineyards for wine production. The diversity of red grape varieties, such as Syrah, Grenache Noir, and Mourvèdre, contributes to the complexity and originality of the blends crafted by the estate. Similarly, the varied palette of white grape varieties, including varieties such as Grenache Blanc, Muscat Blanc à Petits Grains, and Macabeu, allows for the production of white wines with great aromatic richness and finesse. The commitment to traditional farming and harvesting methods, combined with meticulous grape selection, gives the estate's wines a unique personality and authentic character, perfectly reflecting the terroir from which they originate.
