georges descombes is classically from a family of winemakers for several generations. however, he was rather attracted by mechanics and was the only one willing to take care of the family vineyards. after attending viticulture school, he signed his first vintage in 1987 from the brouilly parcels inherited from his grandmother. this did not prevent him from continuing to work part-time in a bottling company and, as if that were not enough, to work two days a week for other winegrowers in the area. it was only in 1993 that georges descombes devoted himself totally to his estate, which today covers 17 hectares: about seven in morgon and the rest, in decreasing order, in brouilly, régnié, chiroubles, beaujolais-villages and beaujolais. even in his early days, georges descombes was never a winegrower who was very familiar with chemical treatment. for more than ten years, he has been working his vines according to organic principles, using weed killers only in very steep plots that are impossible to plow. since the beginning, most of his vines are ploughed, the fermentation is started by indigenous yeasts, and the vinification is done without sulphur in concrete, stainless steel and epoxy tanks, in full carbonic maceration. since 1993, the harvest is cooled in order to obtain longer and softer vinifications, as it is practiced at the jean foillard estate. the old vines of georges descombes have the particularity of being located almost entirely on the "corcellette" climate of the morgon appellation, one of the ten crus of the beaujolais considered to be one of the most intense and deep. most of the gamay plots are located at the top of this climat, near the hamlet of st-joseph-en-beaujolais and the col de truges. this relative altitude often offers a nice freshness to this cuvée, especially in sunny vintages. georges descombes is a follower of a healthy culture and is guided by the precepts of organic agriculture. he ploughs his soils and does not use any chemical products in his vineyards. in the cellar, the work is just as meticulous, the idea being to let the grapes and the terroir express themselves. thus, the vinification is conducted in inert containers and the fermentations are started by indigenous yeasts. savored during its first ten years, this wine is appreciated for the generosity of its fruity aromas, the satiny texture of its mouth and a certain minerality which animates it.
