"la belle hélène comes from serine (old variety of syrah) grown on the côte rozier. the plot, planted in 1958 (one of the oldest vines of the estate) is exposed to the south. this exceptional terroir of brune is composed of misaschist. the planting density is 10,000 feet/hectare with a yield of 35 hectolitres per hectare. the harvest is manual and sorting is done at the plot and on the table at the entrance of the winery. concerning the winemaking, 100% of the grapes are in whole bunch and there is a fermentation with submerged cap. the berries have undergone cold pre-fermenting maceration, pigeages and reassembly. the yeasts are native. the wine was then aged for 20 months in new french oak barrels. stéphane ogier produces a dense, intense and complex wine. to keep many years, because its aging capacity is about 25-30 years. served at 16°c, it goes perfectly with a duck breast with cep mushrooms, a hare à la royale or a leg of lamb à la provençale."
