planted sixty years ago on a particularly stony clay-limestone terroir, the vines are today indisputable on the beaune mountain. particular care is taken in the vineyards, the life of the soil is preserved, yields are naturally low and the whole estate is cultivated in organic farming, certified since 2009. the grapes are harvested by hand and followed by a drastic sorting in the vineyards and in the cellar. the grapes are vatted by gravity without being crushed. gentle fermentation in stainless steel vats is then started with the help of indigenous yeasts. the wine is finally aged for a dozen months before being bottled without fining or filtration. the colour of this côtes-de-beaune clos des topes bizot is deep and its bouquet is of great elegance. once on the palate, you will appreciate its notes of violets and forest fruits. to be enjoyed at least five years after its vintage.
