sclavos is a family-run winery located on the island of kefalonia. the first vineyards, with the mavrodafni and vostilidi varieties, two indigenous varieties of the island, date back to 1919, are all planted on ungrafted vines and are grown on goblet-trained vines. maintaining this cultivation and philosophy means a constant effort in order to avoid having to touch the product too much once it is in the cellar. they apply natural vinification without sulphites (or with very low doses), with the risk and cost that this implies. although they themselves are advocates of natural vinification, they are not against technology, but use it to their advantage in order to intervene as little as possible. another method to protect these wines is to let the alcohol rise somewhat during fermentation. oxidative white wine with an orangey colour. aromas of honey, nuts and candied fruit. in the mouth it is very full-bodied with a tannic finish typical of the variety. this vostilidi grows at an altitude of less than 50 m in pre-phylloxera vineyards of more than 100 years old and with a yield of 600 kg/ha.
