"the maison vouette and sorbée is located in the aube in buxieres-sur-arce and can be perfectly summed up in the figure of bertrand gautherot, a small vigneron who produces his own pearls in 15 hectares of vineyards, converted to organic and biodynamic cultivation in 1998. his harvests are carried out only with strictly manual harvesting, without the use of tractors, with vinification carried out with malolactic fermentation in oak barrels. only indigenous yeasts obtained from its own grapes are used, and frothing, resting on the lees and remuage are all operations carried out strictly by hand, a' la volee'. all of bertrand's champagnes are very elegant, fresh and mineral, of great balance and harmony with a preponderance of pinot noir. the champagne extrait by vouette & sorbée takes its name from the french word ""extrait"", which literally represents what it is - a barrique wine extracted from a sigle vintage. this is one of the best blending of pinot noir and chardonnay, in a varied percentage for each variety, according to the harvest. the resting period on its own yeasts is extremely long - nearly 10 years - before the wine is manually disgorged. non dosed champagne - making it a brut nature - which perfectly reflects the quality of the vintage: elegant, complex, extremely mineral with a rather structured and chalky texture."
