champagne vouette et sorbee blanc d'argile is the blanc de blancs (100% chardonnay) made for the gautherot family solely from the biaunes vineyard. this is a relatively young vineyard, planted in 2000, on calcareous kimmeridgian soils and an unusual western exposure. this causes the chardonnay to mature very slowly. the yields are very limited, since it carries out a very selective pruning of only 5 bunches per vine. all the work both in the vineyard and in the winery is done biodynamically. fermentation with indigenous yeasts in used bourgoignon oak barrels. aging in the same barrel for 10 months and subsequent aging in the bottle for approximately 2 years. unfiltered, unclarified and with very low total so2, around 20 mg/l. no dosage, brut nature. there are many great wines, some great champagnes, but producers that move, that go beyond simple sensory pleasure and caress your emotional side, there are very few. vouette et sorbee (bertrand gautherot) is one of them. and this blanc d'argile is one of the most personal blanc de blancs to be found in champagne.
