"the coessens family owns vineyards in ville-sur-arce, on the hills of the côte des bar for 5 generations. in 2006 jérôme coessens, after 7 years of managerial experience in a large champagne house, decides to create domaine coessens. the ambition of the domaine coessens is to discover through its champagnes all the richness of an exceptionally rare terroir, and with the patience and necessity of its founder, to create complex wines with strong personality, fruity and mineral, without ever betraying its origins. all the champagnes of the domaine coessens come from a single vineyard of about 6 hectares planted in pinot noir and called largillier, precisely because of its exceptional clay content, for all practical purposes it is a monopoly that has always belonged to the coessens family, a unique land with a soil of kimmeridgian origin that has characteristics very similar to the best terroir of chablis. after years of study, jérôme divided the largilliers monopoly into four different parcels of land, called mineral, fruit, flower and matter. in the vineyard, tillage is used to promote deep rooting and grass to control the vigour of the vine. the selection is made only on the oldest vineyards where the roots sink deep, for jérôme the art of creating a great champagne begins at the foot of the vineyard, is the grape that embodies all the qualities and the inimitable authenticity of its terroir. the rosé de saignée from coessens is a complex cuvée, with tangy and gourmet notes. it is a champagne that is vinified according to the old bleeding method, which consists of treading the clusters. the grapes thus crushed are in contact with the juice and can release their aromas, tannins and coloring materials (content in the skin of the grapes) which will transmit this inimitable taste to the wine. the rosé de saignée coessens, like the rest of the range, is made only from black pine nuts. it is a cuvée that takes advantage of malolactic fermentation to round the aromas, and that ages 36 months on lees. its dosage is 9g/l to comfort its gourmet aromas."
