damien goulard is a young talented winemaker who we have not finished hearing about. he is part of a family where viticulture has been an important part of the family since 1978. the house was founded by jean-marie and martine goulard that year. damien inherited the passion for wine and vines and took over the estate in 2012 with the desire to perpetuate the family traditions but also to express all the richness of the massif de saint-thierry. indeed, this terroir benefits from both a micro-climate favorable to the development of the vine but also a mosaic of soils with a sandy-clay and clay-limestone component. this makes the soils draining and capable of absorbing all the trace elements that the vine needs and thus of producing round and sustained wines with a vivacity proper to the massif de saint- thierry. damien, who considers his 8 hectares of vineyards as a garden where each piece of land deserves special attention, favors a reasoned agriculture and has just undertaken a conversion of his vineyard to organic farming. j m goulard l'eclatante rose; from the first glance the dress surprises with a beautiful color of crushed raspberry, almost ruby and marked by a certain intensity. the effervescence brings a little lightness and crowns the whole with a pretty cord of moss. on the nose, there are notes of kirch cherries, marshmallow and subtle notes of saffron. when aired, notes of citrus fruit and grapefruit peel come to affirm the vinosity of this champagne. as soon as it is put into the mouth, the finesse of the bubbles accompanies the structure and the power of this wine. the underlying acidity maintains the balance until the finish. this is done in a tender, fine way with a persistent aromatic return.
