dom pérignon, a benedictine monk appointed cellarer of the abbey of hautvillers in 1668, marked his time by his contribution to the development of champagne wine, originally designed to be a "still" wine (without bubbles). the advent of napoleon, a friend of jean-remy chandon, in 1804, marked the beginning of an era of uninterrupted commercial success for the house of moët & chandon, whose fame is now worldwide. "dom pérignon", the prestige cuvee of the house, is certainly the most famous champagne in the world. the house began to market its cuvées from 1936 (in the 1921 vintage, produced in only 300 copies), and was an immediate worldwide success. this cuvée, with its characteristic bottle in the shape of an 18th century flask, is produced only in the best years. the volume of dom pérignon bottles produced is a secret jealously guarded by the lvmh group, which today owns the moët et chandon house. other creations now complete the range such as the cuvée de rosé, a combination of chardonnay and pinot noir offering the wine aromas of red fruits, candied citrus fruits as well as empyreumatic notes; as well as the dom pérignon p2, a second life offered to its emblematic cuvée, dom pérignon vintage, which then ages longer, between twelve and fifteen years in the cellar. dom pérignon rosé 2008 is a tribute to pinot noir which here is blended to perfection with chardonnay in proportions kept secret. although it took more than ten years to see the light of day, the body of dom pérignon rosé 2008 manages to express all the tension between youth and maturity, exhibition and restraint. treat yourself to excellence!
