sotiris gkinis has been growing this small winery since 2009, specializing in capturing the traditional character of the area. he works primarily with the savatiano grape, the most widely planted white variety in greece and home to the oldest vines in the country, second only to the vineyards of santorini. sotiris works with 6 hectares of vineyards planted by his grandfather in 1958. in 2009, sotiris began cultivating the family vineyards organically and with low yields. a great advocate of minimal intervention, sotiris believes that the most important task in viticulture is knowing how to observe. one of his winery's maxims is harvesting at night to prevent fermentation from starting unintentionally on the way to the winery in the hot athenian climate cold maceration of the must with the skins for several days. spontaneous fermentation then takes place in a stainless steel tank, now without the skins, and the fine lees are worked in the same tank for 8 months. a small amount of sulfites is added during bottling.
