"a small village surrounded by five hills forming the branches of a star (montangis, mont morin, mont genezet, mont muzard and montarbeau), to the north of lons-le-saunier, l'étoile owes its name to this geographical peculiarity, unless it is because of the innumerable fossil stars still present in the vines, the """"pentacrines"""". in any case, the finesse of the wines of the appellation no longer gives rise to debate. the grape variety is mainly composed of chardonnay but also of savagnin and in lesser proportions, of poulsard, in particular for the elaboration of the straw wine. the white wines express the terroir of this aoc, with elegance and finesse. the clay-limestone soils, which are lighter than those of château chalon, give more delicate, softer yellows than their neighbours, as well as typical or floral whites, made from chardonnay and savagnin. in addition, l'étoile also produces vins de paille, in which a small proportion of poulsard may be allowed when vinified as a white. originally known for its crémants (it is even said that the champenois, when they ran out of wine, bought these jura sparkling wines), the appellation still produces a not inconsiderable proportion, based on chardonnay. the château de l'étoile property was acquired by auguste vandelle in 1883 and is now run by the 5th generation, via georges vandelle. the vineyard covers 25 hectares and is essentially composed of the mont muzard hill, whose eastern, southern and western slopes with marly subsoil are particularly suited to the vine. the grape varieties are savagnin, chardonnay, poulsard and trousseau. this estate is a reference in the jura. the cuvée l'etoile is aged in barrels for 6 to 15 months, without topping up. it offers aromas of lime blossom, honey and fruit (citrus), which are found on the palate, on a round and supple body, with light notes of fresh nuts. an ideal wine to accompany white meats and comté cheese."
