he is as discreet as his wines deserve to be known...he is just one of the best wine producers in the jura trained as an electrician, philippe butin was not particularly destined to become a winemaker. in 1981, he decided to take over the family business. today, at the age of 65, and with almost a whole career as a winegrower behind him, it can be said that he has done a lot for the wines of the jura. little interventionist, not certified to give himself room to manoeuvre if the conditions impose it, he runs the estate in a reasoned approach, in the same way as the oudin sisters in chablis. the estate has about 5.5 hectares of vines (including 4 hectares of white, chardonnay and savagnin). the whole range is worthy of note. the reds have not seen an ounce of wood, the whites are mostly aged under veil, and the yellow wines are among the finest specimens i know...as for his straw wine...philippe produces a range of red wines that faithfully keep the varietal side of the grape. the musts are fermented with indigenous yeasts and matured in stainless steel tanks to preserve the freshness of the fruit. the pink onion-coloured poulsard is "groseillant", the ruby-coloured trousseau is more strawberry or cherry. one gram of sulphite is added at bottling to ensure the stability of the wines. philippe butin is not a fan of sulphur-free wines. philippe butin cotes du jura chardonnay 2018 has a nose with a nice evolution, brioche, chiselled with a mineral background on chalk and slate, the nose is sensual and deep, it is really addictive. on the palate, we have a measured alcoholic power with a slight oxidative note. nice hyper saline length, and finely citrusy.
