"the vincent dauvissat estate in chablis has been cultivated for three generations. rené, vincent's father, and before him robert, his grandfather, were already working their vines and bottling their own wines. vincent has been running the estate that bears his name since 1989. the 12 hectares of vines at domaine vincent dauvissat cover the four local appellations: petit chablis, chablis, chablis 1er cru (6 ha) and grand cru (2.7 ha). the vines have been cultivated biodynamically since 2002. its chablis wines turn the heads of wine lovers and the estate produces only white wines, with the exception of a red irancy. the rigorous and passionate vincent dauvissat manages this mythical property since 1989. he succeeded his grandfather robert, who was already bottling in 1931, and his father rené, whose wines were renowned. vincent's daughter étiennette has now joined her father. the vineyard has always been tended like a garden and the wise yields deserve all the honours. since 2002, the estate has received biodynamic preparations, without claiming certification. the vinification in barrels (which never takes precedence over the material) is not very interventionist, allowing the expression of the various climates, especially with ageing. chablis of a rare sincerity, of a pure, compact, vibrant style, relatively unprotected in sulphur. the range can be found in wine shops as there is unfortunately no more wine for sale at the estate. the wines: very expressive, the petit-chablis is ripe and bright, with flavours of honey and yellow fruit. juicy and refined, the chablis is very honest and luminous, with flavours of dried herbs and a caressing substance. ample and fleshy, vaillons is more tender, balanced and slender. aniseed and pure, séchet is straight and deep, a crystalline and bright wine. with its nose of citrus zest, montée de tonnerre is salty and reserved, very precise and persistent: it gains in intensity each year. very firm, la forest is a distinguished wine, with a noble austerity, which has a lot of sap and dry extracts, coated and incisive at the same time. penetrating and cold, full-bodied and racy, les preuses dazzles with its sharpness and salivating freshness, whose presence and brilliance will move you: very long ageing is necessary, as shown by an exceptional 2003, of incredible youth. notes of pepper and chlorophyll in les clos, a broad and appetizing wine, spherical and imposing, with a tight structure but whose scope and power carry the palate, made almost tannic on the finish by the firmness of its marl terroir."
