The appellation area is located in the south of the northern Côtes du Rhône, on the right bank of the Rhône, in the commune of Saint-Péray and in a district of the commune of Toulaud, in the Ardèche department. The presence of vines in Saint-Péray has been attested to since the High Middle Ages.
The AOC of Saint-Péray wines benefits from two types of terroir: the granitic hillside of Cornas continues in the commune of Saint-Péray as far as the Biguet district in Toulaud. This hillside is separated from a limestone massif dominated by the remains of the Château de Crussol by the Mialan valley. The rugged hillsides and deep valley create a cool microclimate in a warmer continental region.
The wines of Saint-Péray are white, dry and aromatic, always with great finesse and elegance. For still and sparkling wines, the grape varieties are Marsanne and Roussanne. Sparkling wines are made by second fermentation in the bottle according to the Champagne method. The still wines are vinified after a short pressing and a fermentation partly in new barrels, partly in stainless steel tanks. The quality of the work of the Domaine Alain Voge and the unavoidable M. Chapoutier is to be noted in this appellation.
