Andalucia has been producing wine for three millennia. Andalucia forms an amphitheater facing the Mediterranean, bordered by reliefs and subjected to a very hot and dry climate, moderately cooled by maritime influences. The greatest wines of Andalusia (Jerez, Montilla-Moriles in particular) are dry or sweet white wines, often of an oxidative type, obtained after a complex aging process that is unique in the world (criadera, solera).
The factors that differentiate the appellations are due to variations in climate, soil, grape varieties (Palomino, Pedro Ximenez, Moscatel, etc.) and local practices (maturing, ageing).
