Sparkling wines first appeared in the Jura in the 17th century. In the 20th century, some houses specialized in sparkling wines; the appellations arbois, côtes-du-jura and even l'étoile existed in sparkling version until the recognition in 1995 of the AOC crémant-du-jura, which is steadily developing.
The appellation applies to sparkling wines elaborated according to the strict rules of crémants. The grapes are harvested within the production area of the AOC côtes-du-jura. The grape varieties used are those of the region: chardonnay, savagnin in white; poulsard, trousseau and pinot noir in red, to which can be added the pinot gris. The white crémants feature chardonnay, alone or blended with other varieties such as pinot noir or trousseau. Maturing on lees lasts a minimum of nine months. The Crémant-du-jura produces a high proportion of white wines with typical aromas and, to a lesser extent, fresh and fruity rosé wines.
