This is certainly one of the municipal AOCs of the Côte de Beaune with a great future ahead of it. Wedged between its illustrious neighbors Chassagne-Montrachet to the south and Puligny-Montrachet to the east, bordering the terroir of the mythical Grand Cru Montrachet, the Saint-Aubin vineyard has all the assets to produce very great white wines.
The vineyard of about 170 hectares, nearly 80% of which is dedicated to Chardonnay, occupies almost exclusively moderately to steeply sloping slopes at a relatively high altitude. The vine mainly occupies white clayey, highly calcareous and stony soils.
Overall, the white Saint-Aubins, with golden hues that vary according to the vintage and the vintage, offer a complex bouquet combining white flowers, fruity notes, and buttery notes. The wines of Saint-Aubin are great gastronomic wines, which should not hesitate to keep 10 years or more in the cellar for the best first growths.
