"the most recognized australian terroir is that found in the part of the coonawarra region in south-eastern south australia. it is the famous ""terra rossa"" floor. amazingly beautiful in profile, ""terra rossa"" is a bright red earth on white limestone. rich in calcium and iron oxides, it allows good drainage and, in this way, the roots of older vines penetrate the underlying limestone. this rate of water supply contributes, as in the prestigious wine regions of st emilion and cote d'or in france, to the concentration of the taste and distinctive character of wines. among the wineries that have been able to appreciate and bring the best yield to their soils is balnaves, a family business that began its career in 1970 and which, to this day, remains one of the few wineries that remains independent in the region of coonawarra. its blend balnaves cabernet merlot is a wine made mainly with the variety cabernet sauvignon and merlot. these are strains that produce low yields of grapes that are highly concentrated in a chemical compound called flavonoid and which is responsible for giving the wine elegantly intense blackcurrant flavors with characters of mint, even chocolate and mint. strains between 12 and 22 years old to which supplementary water is applied through a central computer. the fruit is destemmed and sorted in the cellar before fermentation in stainless steel tanks at controlled temperature and then the wine matures for 12 months in new and used french oak barrels. thus, with the aim of producing high quality wines from the famous soils terra rossa born balnaves cabernet merlot, a wine from the vineyards that the balnaves family cultivates in coonawarra and that reflects the character and unique flavors that this australian wine region gives especially to cabernet."
