vallegarcia cabernet merlot is a red wine made with 47% merlot, 46% cabernet sauvignon, 5% petit verdot and 2% cabernet franc grape varieties from vineyards in the castilla la mancha region. harvested in september. vinification begins with a pre-fermentation maceration at a controlled temperature of 10ºc for 72 hours. fermentation and maceration for 21 days with frequent pumping over with aeration and malolactic fermentation in french oak barrels and vats. aged for 18 months in french oak barrels and a further 18 months in the bottle before release. alcoholic content: 14.5% vol. tasting notes: bigarreau cherry color. good aromatic intensity where mineral and balsamic notes, thyme and rosemary stand out, together with red fruits with a background of fine wood notes. silky entry on the palate, round, structured where the fruity and balsamic notes appear again, with a finish of subtle toasted notes.
