"this is a young rosé wine, made from 25 year old vines. the grapes are harvested at night, to avoid possible oxidation and to maintain the maximum aromatic potential. once we have the grapes on deposit, we carry out a short maceration, for about 4 to 6 hours. as a result, it gives us a wine with an intense pink colour. once the desired colour is reached, it bleeds directly from the tank and a subsequent 24-hour cold maceration is carried out to preserve as much of its aroma as possible. you let it start fermenting with your own indigenous yeasts. the fermentation is done at low temperature (15 - 18 oc), in order to preserve the maximum quality and potential of this grape variety. afterwards, we age the wine on its finest lees for 3 to 6 months. finally, we clarify and cold stabilise the wine for subsequent bottling."
