diebolt-vallois cuvée tradition is a champagne with a typical champagne blend: chardonnay, pinot noir and pinot meunier. produced by dielbot-vallois, located in cramant on the côte des blancs. dielbot-vallois cuvée tradition nv brut tradition is a deep, powerful wine bursting with fruit. melon, white flowers and minerals are just some of the notes that emerge in the glass. it's a seemingly medium-heavy wine, but its fruit is supported by great power. the brut tradition is another great effort from diebolt vallois. diebolt-vallois champagne house located in cramant, in the heart of champagne's côte des blancs region, diebolt-vallois cultivates chardonnay, a noble regional grape variety that draws its nobility from the typical chalk soils. the estate was founded by jacques diebolt and nadia vallois, who gave it their name, and are now assisted by their children isabelle and arnaud. they all cultivate the eleven hectares they own in cramant (a grand cru village) and cuis (a premier cru village). they also grow pinot noir and pinot meunier in the montagne de reims and côte des bar regions. thanks to their location in cramant (east/south-east exposure), the chardonnays express themselves in a powerful, full-bodied register, while in cuis, they capture all the nuances of the soils, revealing minerality, lightness and noble acidity. in the cellar, vinification is carried out on a parcel-by-parcel basis. fermentation takes place either in temperature-controlled vats or in barrels. almost all cuvées, with the exception of fleur de passion, undergo malolactic fermentation. reserve wines are matured in vats or foudres in cellars 14 meters underground. these are the wines that give the family's champagnes their generous appearance. finally, the wines are generally blended at between 6 and 8g/l. their "brut" profile means they can be enjoyed not only as aperitifs, but also at the table with fine, delicate dishes. visit the marne if you're visiting the marne valley, you can't miss epernay and reims. - in reims, notre-dame de reims cathedral is one of the major achievements of gothic art in europe. listed as a unesco world heritage site, this 13th-century cathedral is unique for its stylistic unity, luminosity and statuary. indeed, notre-dame surpasses other churches in the richness of its statuary. in addition to its historical importance, reims cathedral is recognized as one of the greatest examples of gothic architecture in france, both for its architecture and for its statuary, which includes no fewer than 2,303 statues. designed to accommodate huge crowds at coronations, the church is 6,650 square meters and 122 meters long. - the avenue de champagne is one of the reasons why 500,000 visitors come to discover our beautiful town of epernay every year! it is, of course, the must-see part of any visit to epernay. visit one of epernay's great champagne houses: moët et chandon, mercier, boizel, de venoge, de castellane, perrier jouët and many more. so many prestigious names that put bubbles in our eyes. located on the avenue de champagne, you'll be spoilt for choice when it comes to visiting one of these impressive 19th-century mansions and their kilometers of cellars housing the world's most famous champagne cuvées. this is the perfect opportunity to learn more about the creation of these underground galleries, dug at the end of the 17th century. - the "captive" balloon: the story goes back to the 1900 paris universal exhibition, when eugène mercier decided to create the first captive balloon to enable visitors to fly over paris and, at the same time, promote his champagne estate. the "captive" balloon is a kind of hot-air balloon connected to the ground by a cable. in epernay, the tethered balloon rises to an altitude of 150m, offering a 360° panoramic view of the entire champagne region! with your head in the stars, you can admire the prestigious hillsides of the champagne vineyards and the mansions of the famous avenue de champagne, a unesco world heritage site.each "flight" lasts around 12 minutes in total silence, thanks to the hydroelectric winch mechanism that gently lets the helium-filled balloon rise without making a sound.
