"in the territory of morey-saint-denis, to the north, a few meters from the vineyard of gevrey-chambertin and located in the extension of the latricières-chambertin and combottes. the stratified geological structure of burgundy makes that sometimes the mother rock outcrops at ground level. these ""riprap"" sometimes cause ""bumps"", white spots easily spotted. hence the name of this vineyard characteristic of this phenomenon. 10,000 feet/ha to allow the vines to better capture the messages of the terroirs. 35 hl/ha, deliberately weak, allow the grapes to reveal the nuances of each terroir. purchase of grapes from partner suppliers. 2 to 3 weeks of maceration and vinification in total. - native yeasts. - temperature of maceration and controlled fermentation. joseph drouhin seeks total control of the extraction process, which gives color and substance but must not be at the expense of finesse and typicity. the house wants to completely control the drying of its wood for more than 3 years, which contributes to the elegance of the wines. throughout the process, decisions are mainly made according to the tastings, piece by piece. these data are naturally supplemented by technical analyses. as for all the wines of the house, absolute priority is given to the expression of the terroir with respect for the vintage effect. a sumptuous wine! the dress is of a beautiful deep ruby. the nose is complex, it evokes black cherries, with subtle musky tones, associated with notes reminiscent of cigar. the tannins are well coated by the velvety texture. the length in the mouth is exceptional: the palate remains impregnated with candied and spicy notes. a great feeling of harmony. in small quantities, the 2016 harvest brings us a nice qualitative surprise. the grapes, very ripe, gave wines of a deep ruby."
