"this discreet house began with the purchase of a few acres of vines on the côte des blancs in champagne by alfred bonville, a simple winegrower, at the beginning of the 20th century. then in 1936, he bought a house in avize, with a press and tuns, which allowed his son to produce the first bottles under his own name: franck bonville. the estate is not huge, but still counts 15 hectares, spread over 77 parcels in the terroirs of avize, oger and mesnil le roi, classified as grand cru, where the best chardonnay grapes are grown. then came gilles, the grandson, who modernised and perfected the house production before handing over to olivier, the fourth generation, who now carries on the family tradition. his goal? to orientate the estate towards a reasoned culture of the vineyard. goodbye insecticides and weed killers! respect for the environment has become a priority on a par with the quality of the champagne. quality, here we go! here we are not satisfied with just having beautiful terroirs. the work produced upstream is impressive, both in terms of the use of soils, harvests, the use of barrels of meursault, bottling for 5 years before disgorging, perfect dosages in order to obtain high class, very balanced vintages with marked identities. it is a champagne of assembly of wines harvested on some pieces of vines all located in avize, classified grand cru and which face the sunset and named thus as a wink of eye to their exposure. this cuvée is a blanc de blancs made from these very beautiful parcels and harvested exclusively in 2013, a vintage and a cru that seduces both by its roundness and its complexity. a great wine for ageing for future years, this is a single-vintage champagne, 2013, and almost plot by plot. the colour is golden with greenish hues. on the nose as well as on the palate, rich aromas of yellow-fleshed fruits such as vine peach, apricot or pear. there are also notes of white flowers. the finish melts gently into saline and sweet notes. food pairing : as an aperitif, served at 10-12°c with oysters from marennes oléron or belon from the emerald coast in brittany. perfect with caviar canapés or tapenade made from black olives from provence. an unforgettable moment with sushi or salmon in foil flavoured with dill and echiré butter. bottles to be kept in a cellar away from light and noise with a hygrometric degree of 70%."
