the estate was established in 1991 by businessman françois feuillet. the owner of the trigano brand, known for its caravans and trailers, fell in love with the region. he entrusted the wine making to david duband, who was already growing grapes but for the beaune cooperative. the estate now covers 17 hectares, notably in nuits-saint-georges, vosne-romanée, clos-de-la-roche and charmes-chambertin. all the ingredients are there to perfect the burgundian classicism: the estate is certified organic, and has chosen since 2008 to vinify the grapes without destemming. since 1991, the winegrower has evolved a lot in the style of his wines which have gained in precision and elegance. today, they are among the greatest wines of the côte d'or and are notably on the menu of the majority of french restaurants with three michelin stars. the 1st growth aux thorey is made from old vines of more than 60 years old, facing east and planted on clay-limestone soils. the wine is vinified with 80% whole grapes, the vatting lasts about twenty days with some punching down and pumping over without seeking too much extraction. the maturing lasts 14 months, 60% of the barrels are made of one to three wines and 40% of new barrels. the wines rest for three months in vats before bottling without fining or filtering. on tasting, the terroir of nuits-saint-georges is well illustrated here, power and elegance are present, the aromas of strawberry and raspberry mingle with a floral touch on the finish which gives an extra finesse to this 1st growth. its texture is silky and its tannins are well integrated into the matter. a wine that should be waited for five years after bottling for it to settle down. a pairing with a stuffed capon would be a nice option.
