The AOC Jurançon Sec comes from the AOC Jurançon appellation. Its production comes from the same vineyard, located south-west of Pau and occupying an area of 1,000 hectares spread over 25 communes.
If the dry Jurançon are produced from the same grape varieties (with a dominance of the gros mansengs) and on identical terroirs, the authorized yields are higher and the maturity of the grapes much less achieved at harvest time.
The appellation thus offers light, aromatic dry wines that can be drunk young, with a characteristic nervousness and a long finish in the mouth. But they can also gain in intensity and aromas of fruit and white flowers if they are made in a more traditional way, to go as far as complex, fat and good-keeping wines, if the grapes are harvested by successive sorting as in the elaboration of the sweet wines. They then acquire the aromas of exotic fruits and honey typical of the latter.
