This tasty wine, typical of the Jura, not to be confused with the Vin Jaune, is the result of a selection of the finest grapes, a long drying process (originally on the straw) and a delicate pressing.
In its elegant 37.5 cl bottle, everything is softness and voluptuousness. After three months of slow dehydration, in racks, on a bed of straw or suspended, the most beautiful bunches of Chardonnay, Savagnin, Poulsard and Trousseau are pressed. The must obtained ferments slowly and then ages for three years in barrels before becoming this inimitable sweet wine.
The straw wine is very specific. It has a traditional mention which translates a very particular method of elaboration: a limited yield; selective picking of the grapes according to maturity; drying of the grapes in a ventilated room on a bed of straw, on racks, or hung for at least six weeks - but this can last up to six months; pressing of the dehydrated berries full of sugar to obtain a naturally sweet wine that has an alcohol content of between 14.5° and 17°, and then ageing for at least two years in small barrels or 228-liter casks depending on the house.
The result is an amber nectar with a brilliant robe that combines roundness and distinction, charm and power. Although this wine seduces all those who have tasted it (it is difficult not to appreciate it!), its production remains confidential.
