Unlike red burgundy wine, white burgundy wine is relatively easy to understand, and there are many delicious wines at reasonable prices because it can be made successfully from much higher yields than pinot noir.
It is made from the Chardonnay grape which does not have a particularly distinctive aroma or flavor, but a fairly broad palate. Instead, it reflects well on where it is grown and how it is made.
The cooler vineyards of northern Chablis produce a firm, solid wine, more mineral than fruity, with a refreshing acidity.
The southernmost region, the Mâconnais, is warmer and the white Burgundy wines are richer, more rounded, sometimes even buttery. There is more alcohol and less acidity. Simple Mâcon wines are made from high yields and are therefore cheaper. St Véran, Viré-Clessé and Pouilly-Fuissé are appellations of superior quality.
