anne gros and jean-paul tollot, 2 winegrowers from burgundy, combine their knowledge in different and beautiful terroirs from cazelles to minervois. spirit of the south of france, burgundian soul. the combination of burgundian winemakers anne gros and jean-paul tollot in the minervois sets a new standard for quality and character in the languedoc-rousillon. finesse and precision are the two main characteristics of these minervois wines, words that are more often used to describe gros' burgundian vintages than the concentrated reds of the south. gros has run his own domaine in vosne-romanée for decades; his partner, jean-paul, comes from the family's tollot-beaut estate in chorey-lès-beaune. the couple wanted to make wine together, but the question was where, and the search, over a few years, led them to the high hills of minervois. the region's varied terroir, cooler elevations (the same altitude as vosne-romanée, oddly enough) and very old vines offered exactly the combination they wanted, for wines that speak of both sunshine and silk in every sip. the vineyards are located in cazelles, north of carcassonne and in the shadow of the montagne noir, in the hills where the temperatures are cooler and the terroir more varied. the higher altitude (curiously, the same as vosne-romanée) allows the grapes to ripen slowly, preserving their natural acidity and maintaining moderate alcohol in the final wines. one of the highlights of the estate is a walled plot of 100-year-old cariñena vines. the vines are tended according to the principles of "lutte raisonée", following organic practices and avoiding chemical treatments wherever possible. the grapes are harvested by hand and fermented with indigenous yeasts in temperature controlled stainless steel tanks. the wines are aged, depending on the vintage, in a combination of tank and old french oak barrels. as its name suggests, the côte has a fairly steep slope. the clay-limestone complexes, the different sun exposures and the climatic data resulting from the shaping of the combes perpendicular to the fault line of the coast give us a very fragmented pdo classification system. saturated nose with mineral notes of soft goat cheese, than bloody cocktail of cherry, plum and black currant. med round and elastic body with silky tannins, bright acidity, chocolate and juicy dark fruit notes. slightly bitter fruity finish.
